They allow the wines made from them maximum freedom and the time they need to become ambassadors of their origin. In concrete terms, this means that additives are largely dispensed with in the winemaking process. For this, we rely on a long maceration time, careful expansion in wooden barrels and stainless steel tanks, long yeast storage and a lot of patience. Less is sometimes more. That is the guiding principle when it comes to accompanying the wines in the cellar.
