100% Cabernet Sauvignon. Intensely deep purple in color. Soft aromas of blackberry, blueberry, bramble, black plum, gravel, black currants, vanilla, violets, rose, wintergreen mint, with light aromas of char, smoke, sweet tobacco. Following to the plate raspberry, red cherry, cocoa, smoke, walnut, earthy, pencil shaving, cedar, cooked fruit plum, and meat. This is a dry wine with medium plus acidity, high chalky tannins giving structure and adding to the medium plus body. Intense, concentrated flavors that add to a medium plus, fudge brownie, finish.
Food Pairing: Roasted meats, aged cheese

Gualtallary is one of the most prestigious regions in the Uco Valley. The grapes for this wine come from a vineyard at 4,460 feet over limestone soils. It has a fruity nose that leans towards ripe berries and herbs. Hints of cassis are included in the bouquet. This Cabernet might benefit from more aging in the bottle to soften the tannins. However, it already shows good structure with a linear acidity lifting flavors of plum, cherries, licorice, rosemary and peppercorn. Drink now through 2028.

The varietal 2020 Cabernet Sauvignon has varietal notes of baked morrón peppers and is herbal and ripe, with 14.9% alcohol and mellow acidity. It comes through as fruit-driven, expressive, juicy and quite pleasant. It was produced with their own grapes from Gualtallary and matured in new 500-liter barrels. 4,000 bottles were filled in February 2020.
