The 2021 Bacchus is the second vintage release of this wine. It was handpicked (less than one ton), whole-bunch basket pressed, fermented in French oak and matured for 10 months on the lees. It underwent regular bâtonnage and full malolactic fermentation and was bottled unfined and unfiltered. 2021 was a cool and at times challenging season for the producers in Margaret River. A series of poorly timed rain events and the ongoing issues of staffing shortages during harvest time created all sorts of roadblocks for vignerons; however, as is the case in all vintages of this kind, it does sort the wheat from the chaff. This shows the fine-boned fruit intensity that was common in 2021; the acidity is salty and splayed like a web across the palate. The barrel work gives an extra dimension of plushness and richness, revealed by the draw of flavor across the palate. This is long and quite beautiful. Although due to tiny quantities, it may be challenging to source.
